Bacon Baked Beans

Bacon makes the world go round over at The NY Melrose Family.  I swear my husband would eat just about anything if bacon was an ingredient included in it.  Not that I mind a little bacon.  Winks!  A side that we rely on during the Summer months are our Bacon Baked Beans.  They’re great because in the warm weather you don’t need to worry about keeping them chilled.  They are the perfect addition to any Summer Cookout.

We prefer to use Hickory Smoked Bacon with our baked beans, but it’s entirely up to what type of bacon you choose to use.   You’ll want to cook the bacon with the onion in a saute pan for about five minutes before adding the rest of the ingredients.  Once the rest of the ingredients are added, you’ll simmer the beans for about ten minutes.  Make sure to add 2 to 3 tablespoons of water if it appears that there is not enough liquid.  You don’t want to burn the beans.

The trick for our Bacon Baked Beans is that we always leave enough time to bake the beans for 30 minutes in the oven at 350F.  This allows all of the ingredients to have an opportunity to infuse the beans and creates richly flavored Bacon Baked Beans.

Ingredients

  • 6 oz Hickory Smoked Bacon cut into 1/4 strips
  • 1 onion chopped
  • 3 cans Great Northern beans
  • 3 tablespoons brown sugar
  • 3 tablespoons molasses
  • 3 tablespoons maple sugar
  • 3 tablespoons bbq sauce
  • 1 1/2 tablespoons dry mustard
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 1/2 tablespoons apple cider vinegar
  • 1/2 teaspoon liquid smoke
  • salt & pepper to taste
  • 2 to 3 tablespoons of water

Instructions

Cook bacon and onion in a saute pan over medium heat for about 5 minutes or until the bacon is golden brown.

Stir in beans, brown sugar, molasses, maple syrup, bbq sauce, mustard, Worcestershire sauce, vinegar and liquid smoke.


Simmer the beans for 10 minutes keeping an eye on the amount of liquid.


Add 2 to 3 tablespoons of water if the liquid looks low so that the beans do not burn.


Season with salt and pepper according to your taste.

If time allows bake the beans for 30 minutes in the oven at 350F.
