From Minnie: I tend to try to cook by color! A sprinkle of Parmesan and a drizzle of olive oil transform tomatoes into a beautiful side dish. Serve them alongside some BBQ pulled chicken, some roasted leeks, a lovely cabbage slaw, and a delicious orange coconut salad, and you have a nutritious, delicious and very healthy and low calorie meal!
- 4 tomatoes, halved horizontally
- ¼ cup freshly grated Parmesan cheese
- 1 teaspoon chopped fresh oregano
- ¼ teaspoon bacon salt
- Freshly ground pepper, to taste
- 4 teaspoons extra-virgin olive oil
- Preheat oven to 450° F.
- Place tomatoes cut-side up on a foil-lined baking sheet. Drizzle with oil. Top with Parmesan, oregano, bacon salt, and pepper. Bake until the tomatoes are tender, about 15 minutes.
Note: These tomatoes are also great sandwiched between two slices of your favorite healthy whole-grain bread.















Just this weekend I was thinking of how to make tomatoes with parmesan. I knew I didn’t want to have them breaded but wasn’t sure how it would work, and now I stumble on your recipe through the linky party. Coincidence much? Thank you for posting, they look really good.

First of all, these look delicious! Hubby doesn’t care for tomatoes, but I could eat these all my own. Second of all, I never knew there was such a thing as bacon salt. That sounds SOO good.

I have been sharing these yummy tomatoes in many of my cooking classes. I like your addition of bacon salt…should add a new dimension to the flavors. Often I use a Mediterranean seasoning…it’s good, too. It’s a wonderful recipe to prepare on a Silpat.
