Loaded Mashed Potatoes

We eat TONS of potatoes at our house.  They are cheap and can really fill a body up.  So, when trying to feed 3 growing boys and a husband, I have to use starches.  We get bored with the same Mashed Potatoes or Potato Salad all the time.  So, I have been trying to come up with a few variations of your typical potatoes!

Just making mashed potatoes a bit yummier!
Ingredients
  • 6 – 8 Potatoes – peeled, diced, and boiled
  • 1 Packet Ranch Dressing Mix
  • 1 can of evaporated milk
  • 1 stick of butter (I use Country Crock margarine)
  • ⅓ cup of Bacon Bits
  • 1 cup of Shredded Cheddar (or Mexi-Mix)
  • Salt and Pepper to Taste
  • ¼ cup sour cream

Instructions
  1. After draining your potatoes, combine ALL ingredients in a large bowl. (I use my mixer)
  2. Whip until smooth and fluffy!
  3. Serve – simple, huh?
