We eat TONS of potatoes at our house. They are cheap and can really fill a body up. So, when trying to feed 3 growing boys and a husband, I have to use starches. We get bored with the same Mashed Potatoes or Potato Salad all the time. So, I have been trying to come up with a few variations of your typical potatoes!
- 6 – 8 Potatoes – peeled, diced, and boiled
- 1 Packet Ranch Dressing Mix
- 1 can of evaporated milk
- 1 stick of butter (I use Country Crock margarine)
- ⅓ cup of Bacon Bits
- 1 cup of Shredded Cheddar (or Mexi-Mix)
- Salt and Pepper to Taste
- ¼ cup sour cream
- After draining your potatoes, combine ALL ingredients in a large bowl. (I use my mixer)
- Whip until smooth and fluffy!
- Serve – simple, huh?
