So, what do you do when you make too many mashed potatoes? You fancy them up, stretch them a bit, and have them for another meal! Tonight, with my Easy Italian Meatloaf, I am having a simpler form of twice baked potatoes!
Loaded Twice Baked Potatoes Recipe

Bacon, sour cream, cream cheese work together to make this one sinful side dish!
Ingredients
- Leftover mashed potatoes
- 8 oz sour cream
- 1 pkg Oscar Mayer ready to eat Bacon
- Cream Cheese
- Shredded Sharp Cheddar
Instructions
- Preheat oven to 350
- Mix left over mashed potatoes with all ingredients except bacon and pour into a 9×13 baking dish.
- Layer bacon over top.
- Bake for 25 – 35 minutes.

I think bacon makes everything better! Your twice baked mashed potatoes are a fabulous idea to make ahead for a crowd! Love the bacon on the top! YUMMY!
