Bacon & Broccoli Salad

I have never had a problem getting my boys to eat their vegetables, but this Salad makes them love them even more!

Bacon and Broccoli Salad Recipe

Serves: 6-8
 

If you put a little bacon and cheese on your veggies, most kids will eat them.
Ingredients
Salad:
  • 1.5 to 2 heads of broccoli, cut into bite-size pieces, leaving a bit of stem
  • 2 Carrots cleaned and sliced
  • ½ cup red onion, chopped
  • ¼ cup black pitted olives
  • 8 slices bacon
  • 1 cup cheddar cheese, shredded
  • Handful of sesame seeds
Dressing:
  • ½ cup mayonnaise
  • ½ cup natural yoghurt
  • ¼ cup white wine vinegar
  • ¼ cup sugar

Instructions
  1. In a small skillet, fry the bacon until crisp, then remove on paper towels to drain the grease.
  2. Place the broccoli pieces in a large serving bowl, add the shredded cheese, onion, carrots, and dressing and chill covered for 2 -3 hours.
  3. When chilled, crumbled the crispy bacon into bits and add to the broccoli, then add the sesame seeds and olives.
  4. Toss and enjoy!

    This would make a great lunch for a weekend afternoon, too.

  2. Looks really good! Can’t wait to try it! I’ll leave out the olives though, since I really dislike them…I may add Sunflower seed kernels along with the sesame seeds…I will definitely substitute fat free yogurt and mayo…and will use no calorie sweetener instead of the sugar. :-)
